Ok, so heirloom watermelon radishes are my new favourite thing. They're crunchy and delicious and oh so beautiful. Seriously, if there's a better looking veg out there, I haven't seen it. Initially I didn't know what to do with them...other than marvel their tie dye coolness. Eventually I found this Watermelon Radish Salad with Avocado Vinaigrette recipe, which is super easy and very delicious. In the above pic, as I didn't have cilantro I used the pea shoots I hand on hand (another veggie box treat) and it was crazy good....and crazy good looking, am I right?
